This is probably the best book for a beginner learner to read first. It's available for free online at Syosetu. This is great for two reasons. You can use a pop-up dictionary like Yomitan to help your progress, and you don't have to spend any money.
The use of language is perfect for beginners. The sentences are super short. It was the first thing I noticed. Many sentences don't have multiple clauses. Additionally, the dialogue is simple with no characters using difficult-to-understand speech
Great for learning. Mediocre story
My first LN I started reading in Japanese. At the beginning I had to translate most of the words. But over time I learned almost every word that the author would use. Now I only have to occasionally translate something and can read it pretty much fluently.
Story wise it might be interesting at the beginning, but you will notice soon enough that the story is basically just repeating itself. It just goes from one little story to the next, with little progression or action in between.

Simple, in both language and the rest
The first light novel I read in Japanese. I read this because it supposedly was the easiest LN, yet I still found it quite challenging as my lack of vocabulary and grammar made it very hard to parse the sentences. In the beginning I enjoyed reading it as was very exciting actually reading in Japanese for the first time, but over time the simple characters and nonexistent story got old.

I had read novels before but very slowly due to having to look up so many words. Prior to that I'd only ever read manga (typically shounen manga with lots of furigana). Coming from there this book was very easy to pick up and I could read it quite quickly which made it more fun than struggling through 10 or so pages a day with something more complicated. Since isekai is one of my favourite genres in anime and manga, I was looking very much forward to this being my first Japanese light novel one. And well, while it's true that it's easy to read, using simple language and grammar, it had nothing else going for it.
The setting was generic. The only character with any kind of personality was the protagonist. There was no conflict that couldn't be solved instantly with straightforward bear-costume powers. There was no plot nor goals to work towards.
A great first light novel for those looking to make the jump
Compared to most other light novels, this novel uses fairly simple sentence structure and vocabulary, and is an easy read! Combine that with being free to read, I'd highly recommend it for anyone looking to read their first light novel!

Best LN for learners
Review for the the 9 volumes I have read so far: It keeps you interested enough. The main point is that when you are able to read to a decent speed in your target language it makes the content much more fun than reading whatever else you're more interested in but can't quite read it yet. And for that, this LN is the best I could find out there. The language is simple enough if you use yomichan to hover words you don't know, and I found that not having furigana was a blessing, I learned so much
The easiest light novel to read in Japanese
くまクマ熊ベアー is a comedic light novel about a 15 year old hikikomori gamer named Yuna, who has played so much of her favorite VR MMORPG that she has attracted the attention of the game's developers, and they offer her two gifts: an embarrassingly cute bear costume that has hidden powers, and the chance to escape reality permanently by entering a real live fantasy world.

Pretty Straightforward
This is a good recommendation for getting into LN. The difficult vocabulary tends to repeat, so it gets drilled into you.
The vocab used won't be textbook like, but if you've read any fantasy/game manga or played an RPG game or two you'll be fine.
Just note, there is N1/N2 "level" grammar sprinkled here and there.
A good beginner light novel.
This was recommended as a good beginner novel and I agree that it is. The grammar and words are fairly simple, but the first chapter or two will have a lot of tough one-time use words. After that the story and the vocab repeats often enough that you get used to the setting and the author's writing style.
