There are three stories in this book, two of which are strongly connected with water. In the first one, the main character falls into a tropical lake with sheer cliff walls. Unable to get out, he gradually evolves to adjust to a semi-aquatic lifestyle. The whole story takes place in that lake. The second story is about a boy's obsession with a certain fish he's trying to catch. The whole story again takes place near water, with the boy fishing.

Torrential or spurting water is a very central theme in this novel, so the book couldn't be missing from this list. However the focus isn't so much on the water itself as on the characters' feeling of being different and unable to fit in and be accepted. So it only gets an honorary mention.
