While often eclipsed by the 2009 鋼の錬金術師 Brotherhood | L28 show, the original 2003 anime remains a classic. Somehow it manages to be quite intense and heavy, while also being light and comedic at the right moments. The characters are really gripping and well-developed, and it's worth watching for the OST alone. There's plenty to pick apart, but overall the whole is greater than the sum of its parts.
While there's some alchemy & military specific vocab, the overall level of the language (particularly the grammar) was a lot simpler than I expected. I can't go so far as to call it easy, but I'd say it's on the more accessible side for being a fantasy show. The mechanics of alchemy are barely explained beyond 等価交換の法則, and a lot of the same terms, names, titles, etc are reused throughout subsequent episodes, making it great for picking up vocab.
