Ok, so, first of all, this is one of the best anime ever made, quite literally one of the best stories of all time. There's really nothing else I can say along those lines. I only have two tattoos on body and will probably never get more - one is in memoriam of my mom, RIP, and the other is the FMA Flamel sigil. That's how much this story means to me. Moving on:

As far as language learning, there is a decent amount of specialized fantasy language, most of which is introduced in the first few episodes and then repeated. And as you go, there will be new terms peppered in every so often, just sparsely enough that they are easy to mine. Ed's speech is very casual and he uses lots of expletives, while everyone else for the most part speaks with what I would say is average politeness. I'm currently studying for the N2 so it was extra noticeable to me whenever N2 grammar points came up, which was only once or twice per episode. I think you could get away with watching this and enjoying at N3 if you have a fairly wide vocabulary.
