I'm only commenting on the two OVAs for .hack//SIGN here (Intermezzo, and Unison)
Intermezzo: backstory forMimiru, but you don't find that out until practically the end of the episode, so it just feels like "who even are these people?" If you're very into the franchise, it might be a bit easier to appreciate. I don't feel like watching it really added anything relevant. Also the game mechanic featured seemed questionable, but whatever.
Unison: this is fan service, in the good sense of the word. It's a few years after the events of .hack//SIGN and essentially gets all the franchise characters together for a reunion. You get some (understated) glimpses into the .hack//SIGN character's lives, and personally I really loved where they all ended up. There's some very nice lighthearted moments. If you don't know any of the game or other series characters, they'll mostly all feel random, except for Maha who was sort of in .hack//SIGN, but not exactly.
The 2 OVAs are enjoyable enough, but you're not missing much if you skip them.
